Remove and clean grease filters in commercial dishwasher or by hand; inspect and replace
Install Type I or Type II exhaust hood, ductwork, exhaust fan, make-up air grilles, and grease filters; coordinate with fire suppression contractor for system interlock
Monthly cleaning for high-volume or solid-fuel cooking operations per NFPA 96
